    Ingredients:

    Bottle of your choice
    Herbs of your choice

    Preparation:

    Take herbs and oil and place in saute pan and heat them. Remove from the heat and take the herbs out of the oil and let it cool.

    One good combination is chive oil made from thyme, garlic and lemon zest. Take the thyme, stem down, (figure A) and place in the bottle. Fold the lemon zest and use a wooden skewer (Figure B) to push it into the bottle. Then, funnel in the olive oil until it is about an inch from the top and then cork it. This is great on sliced Roman tomatoes, tomatoes with fresh mozzarella, etc.

    Make rosemary garlic oil by heating the rosemary in a saute pan, removing it and setting it aside to cool. Do the same thing with cloves of peeled garlic. Place the rosemary in the bottle and then add cloves. This is wonderful brushed over grilled chicken or poured a little over tomatoes.

    Red pepper oil is made the same way using red pepper and peppercorns. It is good as a dipping oil for bread, or brushed on grilled meats.

    When storing your oils, keep them refrigerated and do not keep them over two weeks.
