    Herb-Roasted Turkey With Cherry-Onion Chutney

    Ingredients:

    2-1/2 lbs. pitted cherries, fresh or frozen
    1 cup yellow onion, diced
    2 Tbs. fresh ginger, minced
    1-1/2 cups white sugar
    1/4 tsp. mustard seed
    1/4 tsp. celery seed
    1/8 tsp. ground allspice
    1/2 tsp. ground coriander
    1/8 tsp. ground cinnamon
    1/4 tsp. dried red pepper flakes
    1 tsp. salt
    1-1/2 cups white wine vinegar

    Preparation:

    Combine all ingredients in a heavy saucepan. Bring to a boil. Reduce heat to medium-low and cook for about 1 hour or until a little syrupy. Remove from heat and sauce will thicken as it cools. Serve warm or at room temperature.

    Yield: 4 servings
