    Roasted Pork With Piri Piri Sauce

    Ingredients for the Piri Piri:

    1/4 cup chili peppers
    1 cup olive oil
    1 lemon slice, cut into quarters
    1 bay leaf
    1/2 tsp. salt
    1/2 cup brandy or whiskey
    2 cloves garlic, minced

    Preparation:

    Combine all ingredients in a medium saucepan and heat for 15 minutes. Let cool; pour into a glass container. Refrigerate overnight.

    Ingredients for Roast Pork:

    1 red bell pepper
    4 cloves garlic
    1 tsp. salt
    4 Tbs. olive oil
    3 tsp. Piri Piri Sauce
    2-3 lb. pork loin, boneless

    Preparation:

    Cut bell pepper into slices and place in food processor. Add garlic, salt, olive oil and Piri Piri Sauce (make sure you get some ingredients from the bottom of the Piri container -- not just the oil). Puree until smooth.

    Pour marinade over pork loin, cover with plastic wrap and refrigerate overnight. Preheat oven to 350 degrees and cook pork for 40 to 45 minutes per pound, uncovered. Slice and serve with pan juices drizzled over the top.
