Ingredients: Juice from 1 large or 2 small limes 6 Tbs. red wine vinegar 4 Tbs. brown sugar 1/3 tsp. salt 1/2 tsp. ground cardamom, toasted until fragrant 1 to 1-1/2 lbs. mango and pineapple, diced (l large ripe mango and 1 small pineapple) Preparation: Combine salt, vinegar, brown sugar and cardamom and add to the lime juice. Stir until sugar is dissolved. Add red chili to fruit, then add the previous mixture to fruit and mix well. Serve at room temperature. Servings: 2 cups Chef's Notes: - Use less brown sugar if the fruit is very sweet.
