    Macadamia Nut-Crusted Chicken With Ginger Dip

    Ingredients for Macadamia-Nut-Crusted Chicken:

    1 large garlic clove, peeled and sliced
    1/3 cup salted macadamia nuts
    1 tsp. Thai fish sauce
    1 Tsp. peanut oil
    Juice of 1/2 lemon (about 1 Tbs.)
    1/4 tsp. freshly ground pepper
    3 boneless, skinless chicken breasts, trimmed

    Preparation:

    Combine first six ingredients in food processor and process into a thick paste. Spread nut paste over both sides of the chicken. Cover and marinate in the refrigerator for about 30 minutes. Grill or pan-fry chicken until juices run clear. Cut into chunks and serve with Hot-Sweet Ginger Dip as an appetizer.

    Ingredients for Hot-Sweet Ginger Dip:

    1 inch of fresh ginger root, peeled and chopped
    2 small hot chilies (red or green), seeded and chopped
    2 shallots, peeled and chopped
    2 garlic cloves, peeled and chopped
    3 Tbs. white wine vinegar
    2 Tbs. sugar

    Preparations:

    In food processor, chop chilies, shallots and ginger until fine. Add sugar and vinegar and pulse to blend. Refrigerate in an airtight container. Flavor improves after several days.
