Ingredients: Variety of colorful chili peppers and fresh fruits and vegetables White vinegar (enough for container) Container (wine bottle or jar) Preparation: Layer chilies and other colorful ingredients in a jar. For narrow necks use a wooden dowel to ease through. Slice some peppers to reveal seeds. Fill with vinegar. Chef's Notes: - Wear gloves.
- Don't pack too tightly or too loosely. Peppers should not float around.
- Add a little vinegar to check work about a third of the way into the process.
- Some suggestions for the vegetables and fruits include the following: carrots, onions, garlic, cranberries.
- Once you begin using your Chili-Pepper Vinegar, you can add more vinegar to the bottle. You can continue doing this until the peppers begin to fade. Once that happens, it's time to make a new batch.
- Why not put together a chili gift basket (figure A)? Include a bottle of the Chili-Pepper Vinegar, a recipe and the ingredients to make Chili Cornbread. You could even add a small skillet or cast-iron muffin pan. If you wish, you could also tuck some packets of chili-pepper seeds into a terra-cotta pot so the recipient can grow her own peppers.
- A great idea for spicy pickles: buy a jar of your favorite pickles, remove a couple and add a hot pepper or two. Keep it in the refrigerator for about a week so the pickles can absorb the pepper flavor, and voila! Spicy pickles!
