Ingredients: 1 stick sweet butter, softened 1 medium-size orange 2 tsp. dark brown sugar 2 tsp. orange marmalade Preparation: Grate orange rind to yield two teaspoons. Squeeze the orange to yield two teaspoons juice (strain to remove seeds and pulp). Place softened butter into a food processor. Add grated orange rind, orange juice, brown sugar and marmalade. Process until well blended. Spoon into ramekin or place mixture on sheet of waxed or parchment paper about 4" from one end. Fold excess paper over the mixture and shape into a log using a knife. Roll up the paper, twist the ends and chill until ready to serve. Slice into round butter patties or give in a roll as a gift.
