    Aberdeen Angus Beef Filet With Scotch Whiskey Sauce

    Ingredients:

    One 7-8 oz. beef filet
    1/4 cup cooking oil
    1/4 cup chopped onion
    1/2 cup wild mushrooms (fresh or rehydrated dry mushrooms)
    3 Tbs. Scotch whiskey
    1/2 cup brown sauce
    1/4 to 1/3 cup cream
    Salt and pepper to taste

    Preparation:

    Sprinkle beef filet with salt and pepper. Heat oil in pan and brown beef on both sides. Place in a 350-degree oven for 15 minutes or longer, depending on the degree of doneness you prefer.

    While cooking the filet, make the sauce. Cover the bottom of a shallow pan with oil. SautC) onions and mushrooms until the onions become translucent. Add whiskey and allow to flame to remove the strong taste. Add brown sauce (store-bought, or make your own) and stir. Pour in the cream and stir. Add enough to make a creamy coffee color and stir until the sauce sticks to the back of a spoon (approximately 5 to 10 minutes).

    Ladle some sauce onto a serving plate, place beef on the sauce, then top with plenty of mushrooms and remaining sauce. Serve with baby carrots and fingerling potatoes.
