 Pork Tenderloin with Grape Sauce

Ingredients: 1 medium pork tenderloin 1 Tbs. minced garlic Salt and pepper to taste 2 tsp. olive oil 1/2 stick butter 1/2 medium shallot, sliced thin 1/2 tsp. salt and pepper 1 cup white wine 1 cup red grape halves 1 tsp. fresh thyme Preparation: Rub pork tenderloin with minced garlic, salt and pepper. Pan-sear in olive oil, approximately 5 minutes on each side. Finish in the oven at 375 degrees for about 15 minutes. Preparation for the sauce: Saute shallots in butter and season with salt and pepper. Add wine and reduce to half. Add grapes and let simmer for 3 minutes. Garnish with fresh thyme and serve over sliced pork tenderloins. Yield: 2 to 4 servings Chef's Note: The sauce is also delicious over grilled or sauteed boneless chicken breast.
