    Ingredients:

    1 can anchovies
    1/4 cup milk
    1/4 cup diced red onions
    3 diced and crushed garlic cloves
    1 Tbs. olive oil
    1 lb. pitted, diced black olives
    2 Tbs. chopped cilantro
    2 Tbs. chopped parsley
    1 Tbs. chopped red bell pepper
    1 Tbs. capers
    1/2 tsp. pepper
    2 oz. balsamic vinegar
    1 Tbs. chopped scallions
    1 Tbs. lemon juice

    Preparation:

    Drain oil from anchovies. Soak in milk 10 minutes to remove strong fishy taste. Rinse and pat dry, chop and place in medium bowl. Saute red onions and garlic in olive oil until translucent. Cool. Combine all ingredients and refrigerate one hour. Serve with Melba toast, pita triangles or other breads or crackers.
