This low-fat peach frozen yogurt trims the fat from old-fashioned homemade ice cream. The yogurt has only 50 calories and no fat per serving, compared to 200 calories and 14 grams of fat per each serving of peach ice cream.

Q: I'm trying to eat healthier, but I miss my ice cream. I especially loved making ice cream when I was a kid. Do you have some recipes?

A: (Tim Harlan, M.D. -- aka "Dr. Gourmet") I love the old fashioned flavor of homemade ice cream, and I especially like the flavor peach. Three of four days before you are ready to make this recipe, place 5 peaches in a brown paper bag and allow them to ripen until slightly soft.

    Ingredients:

1-1/2 lbs. sliced peaches (about 5)
    1 cup Splenda
    2 tbsp. fresh lemon juice
    3/4 cup non-fat yogurt
    Food processor
Frozen dessert / ice cream maker

    1. Peel and slice ripened peaches and place in a single layer on small cookie sheet or plate. Cover with plastic wrap and place in freezer. Allow covered peaches to remain in freezer for about an hour.

    2. Place half of the frozen peach slices into a food processor fitted with a steel blade. Process until smooth.

    3. Add Splenda, lemon juice and non-fat yogurt. Process until well blended.

    4. Add remaining peaches and pulse in food processor until sliced into bite sized pieces.

    5. Remove mixture from food processor and place in bowl of an frozen dessert maker for 30 minutes or until set. When ready to serve, remove from freezer and allow to thaw slightly (about 15 minutes).

This recipe can also be made without the use of the electric appliances listed above:

    1. Instead of using a food processor, mash half the peaches with the lemon juice, Splenda and yogurt in a mixing bowl.

    2. Roughly chop the second half of the peaches and fold them into the peach / yogurt mixture. Put mixture in freezer.

    3. About every ten minutes remove and fold the frozen yogurt mixture using a rubber spatula. Be sure to scrape the sides well, folding from the bottom of the bowl to incorporate as much air as possible.
