    Pizza Cookies

    Recipe courtesy Monica Thompson, Ackworth, IA.

    Ingredients:

    1 tube refrigerator biscuits (the inexpensive 10-to-a-tube store-brand kind)
    1 cup pizza sauce
    1 cup. shredded mozzarella or pizza-blend cheese
    Pepperoni or any toppings your prefer, sliced thin

    Preparation:

    Preheat oven to the temperature on the biscuit package. Remove the biscuits one at a time and place on a cookie sheet. Flatten each biscuit with a glass or your hand until it is a 3" to 4" circle. Leave a little "crust" around the edge to help contain the toppings. Spread about 1 tablespoon of the pizza sauce on each biscuit to the crust. Sprinkle on a little of the cheese, then add your favorite toppings. Cover toppings with another layer of cheese.

    Bake as directed on the package, but watch so that biscuits don't become too brown -- they're done when the crust is golden. Let cool a bit and serve warm.

    Chef's Note: To make the preparation go faster, create an assembly line. These are great to make with your kids. They make terrific party food and are perfect to eat while watching a movie or sporting event in the living room.
