 Chocolate-Dipped Strawberries
|
Recipe courtesy Shari Fitzpatrick. Ingredients: Strawberries to taste, wiped with damp cloth or paper towel Dark chocolate to taste, melted White chocolate to taste, melted Waxed paper Chocolate chips for topping Almond slivers for topping Coconut for topping Preparation: Melting tips: Melt the chocolate in top of a double boiler over hot (not boiling) water. Or place the chocolate in a glass bowl and microwave at medium power, stirring often, until melted. Don't overheat the chocolate or it will become thick. You can add a little milk to soften it again. Dipping suggestions: - Coconut, chocolate chips, sliced natural almonds, mini M & M's, chopped peanuts, peanut butter, or butterscotch chips.
- Dipping chocolate can be found at cake- and candy-supply stores, or you can easily use bagged chocolate chips from your local grocery store. Most stores carry a variety of flavors, including milk, dark and white.
Strawberries: Choose firm, red berries. Lightly wipe each berry with a damp cloth or paper towel. They must be completely dry before dipping! Do not hull the strawberries -- leave the leaves on. Dipping the strawberries: - Hold the strawberry by its hull and dip it into the chocolate (about 3/4 of each berry should be covered with chocolate leaving 1/4 of the berry showing for color).
- Let excess chocolate drip off. Place the wet berry over topping bowl, sprinkle topping over berry, then set berry on a baking sheet lined with waxed paper to dry. It's best to let the dipped berries dry at a cool room temperature.
- Eat the berries within 24 hours for best freshness. Keep at cool room temperature. (Note: As a strawberry is 75 percent water, putting it into the refrigerator will cause humidity to accumulate on chocolate, resulting in wet berries.)
- For other fruit ideas for chocolate dipping, try grapes, fresh cherries, raspberries, blueberries and bananas. You can also use marshmallows, chocolate-chip cookies, licorice, Oreos, pretzels, etc.
- Chocolate-dipped strawberries make a great gift. Place the dipped berries in a basket or on a decorated tray. Wrap arrangement with cellophane, ribbons and bows.
- Eight ounces of chocolate will cover 24 to 30 berries.
