 Grapefruit in a Simple Rosemary Sauce

Recipe courtesy Stephen Kalt. Ingredients: 1 pink grapefruit, cut into supremes 1 white grapefruit, cut into supremes 1 cup grapefruit juice 3 Tbs. sugar 1 Tbs. rosemary Grapefruit sorbet Preparation: Combine grapefruit juice, sugar and rosemary in a small saucepan and simmer until reduced by one third. With a sharp knife, remove the ends and the skin from 1 pink and 1 white grapefruit; also remove the pith because it's bitter. Insert knife between each section and cut them out. Alternate the slices in 4 small bowls. Drizzle with syrup, add a scoop of grapefruit sorbet and garnish with a sprig of rosemary.
