Recipe courtesy Richard Jones. All rights reserved. Ingredients: 4 lbs. yams 1/2 cup brown sugar 1/4 cup granulated sugar 1 cup freshly squeezed orange juice 1 cup fresh pineapple juice 1 cup cold water 1 Tbs. ground cinnamon Preparation: Peel yams and cut into 1" pieces, placing yams in cold water as you peel and cut them. When all are peeled and cut, drain yams and place in deep baking dish. Add brown sugar, pineapple juice, orange juice and cold water. Sprinkle with ground cinnamon, cover and bake in a preheated 400-degree oven for approximately 40 to 50 minutes, or until yams are fork-tender.
