Ingredients: 1 Tbs. sugar 1 ripe banana 1 egg 1 Tbs. flour 1 tsp. baking powder Pinch of salt 1/2 tsp. nutmeg 1/2 tsp. vanilla 2 Tbs. vegetable oil Preparation: In a medium bowl, mash banana with a fork. In a second bowl, combine egg, flour, baking powder, salt, nutmeg and vanilla. Heat vegetable oil in a large frying pan. Drop batter by tablespoons into the hot oil and brown on both sides as you would pancakes. Sprinkle powdered sugar over fritters, if desired, and serve.
