Ice cream sandwiches are a nice, cool treat and easy to do! Just take your favorite ice cream and place a scoop on a cookie. Spread the ice cream out with a spatula and then place another cookie on top. Wrap in plastic wrap and freeze for a great treat for later for a party or just to enjoy.
