    Orange Pumpkin Custard

    Ingredients:

    1 medium Oriental pumpkin
    8 eggs
    1 cup sugar
    1-1/2 cups coconut milk
    1 cup coconut sugar

    Preparation:

Cut a hole in the top of the pumpkin and remove the seeds. Wash the pumpkin inside and out. Wrap the pumpkin in foil and tie with a cord.

In a blender, mix the eggs, sugar, coconut milk and coconut sugar together. Pour this mixture into the pumpkin shell. Cook in a steamer or water bath for 4 to 6 hours or until the custard thickens.

    Serve hot or cold.
