    Ingredients:

    1 lb. semi-sweet chocolate pieces (pieces, chips or blocks)
    1 cup heavy whipping cream

    Preparation:

    Bring cream to simmer over very low heat. Add chocolate pieces and stir until smooth. Pour chocolate mixture into a bowl and chill in the refrigerator until it hardens (about 2 hours).

    Shape into candy-sized balls with dry, cool hands. Roll in various toppings such as nuts, candy bits, coconut or cocoa powder. Place in candy papers.

    Chef's Notes:

    • Fill a gift basket with your favorite truffles that you have made for a wonderful gift.

    • A fun idea is to make a cookie basket (figure A ). Just take a basket of your choice and add a jar of cookies, some gingerbread men, cookie cutters, cookie mix and, for fun, a toy. It is a gift that any family with young children would love.

    • For the coffee lover, dip a spoon (any spoon from antique silver to plastic) in some melted chocolate. Place on some waxed paper and let them firm up in the refrigerator a few hours. Then, wrap the spoons in cellophane and tie with a bow. In your gift box, place mugs and fill with coffee bean candy, add a bundle of napkins and put the wrapped spoons into the mugs and you have a great gift basket (figure B).

    • Another great gift idea is to dip pretzel chips in melted chocolate. Let them firm up in the refrigerator and then place in a small gift jar and tie with a ribbon (figure C ).

    • For the ice cream lover, fill a basket some sundae glasses, sauces, sprinkles, ice cream scoops, cherries and you have the fixings for an ice cream sundae (figure D ).
