 This low-fat dessert is cleverly disguised as creamy banana ice cream and luscious fudge brownies.

Executive chef Victoria Fond has always been enthusiastic about bringing out the natural flavors of food by creating dishes that are as healthy as they are delicious. In many recipes Ford modifies a traditional version with ingredients that better lend themselves to our low-fat consciousness. Instead of using cane sugar, for example, she will use fruit sugars and concentrates to sweeten a recipe naturally. In this way we are free to indulge without any guilt. Serve these luscious low-fat desserts to your guests at your next party: Fresh Banana "Ice Cream" Ingredients: 4 ripe bananas (brown spots are okay) 1/2 cup nutty cereal Fresh or frozen berries Preparation: Peel and slice bananas. Place banana pieces in plastic bag and freeze for a day. When bananas are completely frozen, blend in food processor until smooth and creamy-white, about five minutes. Serve immediately, topped with cereal and berries. Tip: If refrozen, "ice cream" will become hard and brown. Fudge Brownies Ingredients: 1-1/4 cup white flour 1/3 cup unsweetened Dutch cocoa powder 1-1/2 cups sugar 2 Tbs. plus 1 tsp. cornstarch 1/2 tsp. salt 1/4 tsp. baking soda 1/3 cup water 5 pitted prunes 1 Tbs. light corn syrup 2 Tbs. vanilla extract 1/2 cup water 1/2 cup chocolate chips Preparation: Preheat oven to 350 degrees. Mix flour, cocoa powder, sugar, cornstarch (2 tablespoons), salt and baking soda in a bowl and set aside. In a blender combine water, prunes, vanilla, corn syrup and 1 teaspoon cornstarch. Puree on high speed 3 minutes until smooth. Add puree to dry mixture and mix well by hand until batter is thick Stir in chocolate chips and pour batter into a lightly oiled 9" by 9" pan, 1-1/2" deep. Bake until a toothpick inserted in the center comes out clean, about 35 minutes. Let cool and cut into squares. Ford suggests combining the banana ice cream with the brownies for a fabulous low-fat dessert. When serving them together, bake the brownies first, then prepare the banana ice cream while they're cooling.
