    Q: My kids will eat breakfast, but only if there is a cartoon character on the cereal box. How can I get them interested in eating a healthy morning meal?

    A: (from master-chef Paul Sturkey) One way to get young kids interested in eating a healthy breakfast is to get them involved in the preparations. Once they've helped in preparing the meal, they'll hardly be able to wait to start eating. Here's a great breakfast meal in which you can involve your kids in the preparations: an omelet frittata (topped to your liking, and the liking of your kids) served with homemade fruit kabobs and muffins.

    Family-Fun Fruit Kabobs

    • Select ripe in season fruit and berries for the kabobs (figure A). We used bananas, strawberries and pineapple.

    • Peel fruit and cut into large dice.

    • Have your kids place their favorite fruits onto 6-inch wooden skewers.

      Safety Alert: If you have wooden skewers with sharp points, cut off the sharp ends to protect against potential injury.

    • Meanwhile prepare the sauce for the kabobs: In a small bowl combine 1/2 cup of apple sauce, 1 cup mixed fruit yogurt and 1 tsp. cinnamon. Top the kabobs with the sauce.

    Open-Faced Frittata Omelet

    Ingredients:

    12 eggs
    1/2 Cup 2-percent milk
    Salt and pepper
    2 Tbs. unsalted butter, melted

    Omelet topping options (figure B):

    Green onions
    Green, red and or yellow peppers
    Bacon, cooked and diced
    Smoked ham , cooked
    Sausage cooked
    Mushrooms-sliced and lightly cooked in butter
    Water chestnuts
    Salsa
    Spinach cleaned and chopped
    Shrimp
    Lobster
    Jalapeno peppers
    Cooked Potatoes -medium diced
    Diced tomatoes cored and seeded
    Shredded cheese of your choice*
    Sour cream*

    Steps:

    1. Pre heat oven to 400 degrees.

    2. Place eggs in a large glass bowl and beat for 30 seconds.

    3. Add mild and stir well.

    4. Place 1/2 Tbs. of butter in each skillet. Use a 6 to 7-inch oven-safe skillet. (The entire skillet will be placed in the oven to complete cooking.)

    5. Have each kid select his or her favorite ingredients and place them in their skillet (figure C).

    6. Cook the ingredients on low heat for about 1 minute.

    7. Ladle beaten egg mixture into each skillet (figure D).

    8. Season with salt and pepper if desired

      *Note: Don't the top of the frittata with cheese or stir in sour cream at this point. These ingredients can be added at the end.

    9. Place skillets in oven and cook for approximately 10 minutes.

    10. Slide frittata out onto a warm dinner palate (figure E).

    11. If you wish, top with additional toppings such as the sour cream, grated cheese or salsa.

    12. Serve with mini muffins (figure F) or biscuits and fresh fruit kabobs.

    Serves four.
