    Q:I don't have time for a big breakfast every morning. Do you have solutions for a quick and healthy breakfast on the run?

    A: (DIY's "Dr. Gourmet," Tim Harlan) A lot of the eat-on-the-run foods that tempt us are not that healthy. The notorious donut typically contains about 280 calories and at least 19 grams of fat per single donut -- about a third the amount of fat you should consuming in an entire day. Even store-bought blueberry muffins (figure A) can contain about 250 calories and 8 grams of fat.

    Here's a recipe for homemade muffins that you can eat on the run that only contain about 120 calories and 5 grams of fat per muffin (figure B).

    • Start with 3 cups of flour. Add 1 tsp. of baking soda, 2 tsp. of baking powder and about 1 tsp. of salt to help the muffins rise. Sift the dry ingredients into a mixing bowl.



    • In a separate mixing bowl, add the following:

      2 tsp. melted butter
      2 tbsp. canola oil
      1 tsp. vanilla extract
      1 egg yolk
      2 egg whites (figure C)
      1 cup of sucralose sugar-substitute
      1/4-cup non-fat yogurt
      1 cup of buttermilk (figure D)

      Whisk the ingredients together thoroughly.



    • Add the wet ingredients into the bowl containing the flour and stir them together. Avoid over-blending the ingredients at this point, as this would prevent the muffins from rising properly. Just gently fold the ingredients together until uniform.



    • When the flour has begun to disappear into the mixture, add about a cup of fresh or frozen blueberries (figure E). Continue folding the ingredients.



    • Place the muffin dough into a non-stick muffin tin lined with muffin papers (figure F).



    • Place the muffins in an oven preheated to 375 degrees, and bake for 10 to 12 minutes.



    • Remove from the oven (figure G), allow them to cool and serve. Or you can store them in a sealed container for breakfast-on-the run throughout the week.
