Jazz saxophonist Dave Koz knows the secret ingredient that his mom adds to every dish she cooks: love! Here the mother-and-son duo share their family recipe for cheese blintzes. A quick Yiddish lesson: Shitarayn is a superstition that a little extra is good luck. So remember that when you make cheese blintzes, it's okay to shitarayn a bit more salt into the batter. Ingredients (Pancakes): Three eggs 3/4 c. flour 1 Tbsp.oil 1 c. water 1/4 tsp. salt (Filling): 2 c. dry cottage cheese (using dry cottage cheese -- drying it yourself -- is very important to avoid soggy blintzes) 1/2 c. sour cream 1/2 tsp. sugar 1/2 tsp. salt One egg yolk - First make the pancake batter by combining all ingredients in a blender. Set aside.
- To make filling, combine all ingredients in a bowl and stir until completely integrated; set aside while you make the pancakes.
- For the pancakes, pour a small amount of batter into a saute pan and cook until golden (about eight seconds), then flip and cook on the other side.
Expert tip: For thin, crisp blintzes, pour batter into the pan, give it a quick swirl, then pour off excess batter. - Remove pancakes from pan and set aside on a plate while you use up the remaining batter.
