Ingredients:
2 cups uncooked, shredded potatoes 1 large egg, beaten 1/3 cup nuts (walnuts, pinenuts, peanuts, cashews, almonds, etc.), chopped 1 Tbs. fresh parsley, minced 1 tsp. soy sauce Oil for pan-frying
Preparation:
Combine all ingredients, except oil, in a medium bowl. Form into patties, about 1/2-inch thick by three inches in diameter. Fry in hot oil until lightly browned and just firm.
