    Cowboy Cornbread

    Ingredients:

    2 cups cornbread mix
    1 cup sour cream
    2 eggs, beaten
    2 cups sharp Cheddar cheese, shredded
    3 Tbs. pimentos, diced and drained
    2 jalapeno peppers, minced

    Preparation:

    Preheat oven to 350 degrees. Add sour cream and eggs to cornbread mix (batter will be stiff). Add cheese, pimentos, and jalapenos. You can adjust how hot the peppers will be by removing the seeds and membranes inside.

    Coat a large iron skillet with vegetable oil and heat in the oven. Once batter is completely mixed, remove hot skillet from oven and spread mix in skillet. Return to oven and bake for 20 to 25 minutes.

    Chef's Note: This cornbread is a great complement to the Black Bean Chicken Chili featured in this episode.
