    Ingredients for Pistachio Bread:

    2 small loaf pans
    1-1/2 cups flour
    2-1/2 tsp. baking powder
    1 Tbs. sugar
    1/2 tsp. salt
    1/4 cup olive oil
    3/4 cup milk
    2 eggs
    1/3 cup pistachios

    Preparation:

    Preheat the oven to 350 degrees. Grease and flour the loaf pans. In a medium-size bowl, combine dry ingredients; set aside. In a small bowl, whisk together milk, oil and eggs until smooth. Add to dry ingredients along with pistachios; stir until well blended. Bake about 20 minutes, or until wooden skewer inserted in the center of the loaf comes out clean. Cool on a wire rack.

    Ingredients for Pistachio Butter:

    1 stick unsalted butter, softened
    2 Tbs. crushed pistachios
    1 tsp. salt

    Preparation:

    Mix all ingredients until well blended. Roll into a cylinder, wrap in plastic and chill for an hour or two. To serve, slice or simply serve in an attractive container.

    Chef's Notes:

    • Pistachio bread is delicious with warm brie. A great gift idea is to give a basket containing a loaf of the bread, a round of brie or a container of the butter and a small bag of pistachios (figures A and B).

    • You can add pistachios to your favorite sugar- or butter-cookie recipe, or sprinkle them on top before baking -- yet another great gift idea for pistachio fans (figure C).
