    Tropical Bread Pudding

    Ingredients for Bread Pudding:

    1 loaf French bread, diced
    8 eggs
    2 cups cream
    3/4 cups sugar
    1/2 stick butter, melted
    1 Tbs. vanilla
    1 cup mango, diced
    2 medium bananas, sliced
    1/2 cup shredded coconut, toasted
    1/4 cup sliced almonds, toasted

    Preparation:

    Combine eggs, cream, melted butter, vanilla and sugar; mix well. Stir in diced bread until all the mixture is absorbed into the bread; set aside while you dice the fruits. Stir in mango, bananas, coconut and almonds. Pour mixture into a sprayed 9" by 9" deep baking dish. Bake in preheated 375-degree oven for approximately 45 minutes, until golden brown.

    Serve warm with Mango Cream Sauce.

    Ingredients for Mango Cream Sauce:

    2 cups vanilla ice cream, melted
    1 cup mango, diced
    1 vanilla bean, inside only

    Preparation:

    Mix all ingredients in a blender until smooth. Drizzle over the bread pudding.

    Yield: 6 to 9 servings

    Chef's Notes:

    • If you can't get fresh mango, use canned -- it's a great substitute.

    • Try adding 1/4 cup sugar, sprinkled on the top during the last 15 minutes of baking.

    • This pudding is great with many different fruits. Try substituting peach for the mango.
