| Pineapple, coconut milk and rum: what's not to like? |

Give your gathering some real party spirit with this classic taste of the tropics.
Materials:
sharp knife ice-cream scoop blender 3/4 c. fresh pineapple 2 oz. canned coconut milk 2 oz. light rum 1/2-1 c. ice
1. Use the knife to remove the crown from the pineapple. If necessary, make downward cuts in the pineapple to loosen up the inside fruit (figure A). Use the ice-cream scoop to remove the inside fruit of the pineapple (figure B). Set the outer shell aside.
2. Add 3/4 cup of diced pineapple, 2 oz. canned coconut milk, 2 oz. rum and ice to a blender. You can add more or less rum to taste. Blend well (figure C).3. Pour into the pineapple shell and garnish with chunks of pineapple, fruit skewers and/or paper umbrellas (figure D). This recipe makes one large piña colada. Multiply the recipe as needed.
