 Batidos (Icy Cuban Drinks)

Ingredients for Strawberry Banana Batido: 1 cup hulled strawberries 2 small ripe bananas 1 Tbs. fresh lime juice Pinch salt 1 Tbs. sugar, or to taste 6 oz. milk 2-3 Tbs. sweetened condensed milk 1-1/2 cups crushed ice Preparation: Cut up strawberries and bananas; place in a blender with fresh lime juice, salt and sugar to taste, milk and sweetened condensed milk. Blend; then add crushed ice and blend for approximately 15 seconds. Ingredients for Papaya Mango Batido: 1 papaya, peeled, seeded and cubed 1 mango, peeled and cubed Pinch salt 1 Tbs. sugar, or to taste 6 oz. milk 2-3 Tbs. sweetened condensed milk 1-1/2 cups crushed ice Preparation: Combine papaya and mango in blender. Add salt and sugar, milk and sweetened condensed milk. Blend; then add crushed ice and blend for approximately 15 seconds. Ingredients for Daiquiri: 2 cups crushed ice Juice of 1/2 lime 1 Tbs. sugar 1-1/2 to 2 oz. white rum Preparation: Blend crushed ice to a fine consistency. Add lime juice, sugar and white rum; blend for 10 seconds. Chef's Note:The daiquiri was invented in Cuba by an American expatriate. Ingredients for Mojito: 2 large mint leaves 1 Tbs. sugar Juice of 1/2 lime 1-1/2 to 2 cups club soda 1/2 cup ice 1-1/2 to 2 oz. white rum Preparation: Place mint leaves, sugar and lime juice in a glass and crush with a spoon, mixing well. Add club soda, ice and white rum; stir and garnish with mint and a slice of lime. Chef's Note: The mojito is said to have been one of Ernest Hemingway's favorite drinks.
