    Sushi Shish Kebabs

    Ingredients:

    Plastic wrap
    Thin slices lemon
    Sushi rice
    Thin slivers avocado
    Chive strips
    Thinly sliced shrimp
    Cilantro
    Thinly sliced salmon
    Toasted sesame seeds

    Preparation:

    Avocado ball. Place a square of clear plastic wrap on the counter. Put a thin slice of lemon and thin slivers of avocado in the center of the wrap. Wet your hands and make a rice ball a little smaller than the size of a golf ball; place in the middle of the avocado slices. Gather the corners of the wrap up and, holding the ball, twist the wrap tightly around the ball; remove the wrap. When making the balls, think from top to bottom: whatever you want on top you will place first on the plastic wrap.

    Shrimp ball. Crisscross 2 strips of chives and add some thinly sliced shrimp. Add rice and make into a ball.

    Smoked Salmon ball. Place a piece of cilantro on the wrap, then add thinly sliced salmon and the rice and make into a ball.

    Place one of each of these balls on a skewer and sprinkle with toasted sesame seeds.
