    Baby Brie Wrapped In Shredded Phyllo With Oranges and Arugula

    Ingredients:

    2 oranges
    1 cup orange juice
    2 Tbs. sugar
    1 Tbs. honey
    1/4 tsp. ginger root
    1 cinnamon stick
    4 whole cloves
    1/2 fresh vanilla bean (scraped) or 1/2 tsp. vanilla extract
    Tip: Slice the fresh vanilla bean down the center, split it in half and scrape the beans from the inside.
    1 cup arugula (cleaned)
    1 baby brie
    Small amount of kataifi (shredded phyllo dough -- can be found in specialty stores)

    Preparation:

    Combine 1 cup orange juice, cinnamon stick, 4 cloves, 1/4 teaspoon ginger root, 1 tablespoon of honey and 1/2 fresh vanilla bean and place in saucepan. Stir and bring to a light simmer. Peel and segment the oranges, remove the pit and seeds, and place in a bowl. Pour the liquid you have simmered through a fine sieve over the oranges to coat and warm them.

    Cut the brie lengthwise in half and lay the kataifi on a cutting board and lightly wrap it around the brie slices. Place in a pan and saute in a mixture of half olive oil and half butter, until browned lightly.

    Place the sauce in a bowl and add the arugula on top of it. Place the brie on top and top with a couple of orange segments.
