    If you love to entertain but find yourself short on time, Chef Harry Schwartz shows how to prepare three delicious hors d'oeuvres in less than 20 minutes. The secret, he says, is using a food processor and adding the ingredients in a certain order that eliminates cleaning between recipes. Simply scoop out each mixture and continue with the next. These recipes are perfect for serving with wine at the house before going out to dinner with 10 to 12 friends.

    Hubris Humus

    Ingredients:

    30 oz. prepared garbanzo beans, drained
    8 cloves minced garlic
    1/2 cup minced fresh parsley
    1 cup toasted sesame seeds
    Juice of 2 limes
    1 tsp. kosher salt
    1 minced jalapeno pepper (wear rubber gloves to handle hot peppers)
    1/2 cup extra-virgin olive oil

    Preparation:

    In food processor, mix the garbanzo beans, garlic, parsley, sesame, lime juice, salt and jalapenos. Add oil slowly from the top to create a paste. Makes about 3 cups.

    Apricot Gorgonzola Pate

    Ingredients:

    8 oz. package gorgonzola cheese
    8 oz. package cream cheese
    1/2 cup apricot preserves
    10 oz. well-cooked bacon, crumbled
    1/4 cup minced scallions
    1 tsp. paprika
    Dash Worcestershire sauce

    Preparation:

    Place all ingredients in food processor and blend until smooth.

    Smoked Oyster Pate

    Ingredients:

    8 oz. package cream cheese
    1/2 cup smoked oysters, drained
    1/2 cup scallions or onions
    1 tsp. paprika

    Preparation:

    Place all ingredients in food processor and blend until smooth. Transfer mixture to pastry bag and spread onto Belgium endive leaves.

    Schwartz says that if you are stressed out when preparing for your party, it is probably because you have selected a menu or project that should have been simplified. Remember to be a guest at your own party and plan a menu that allows you to relax. We all need to realize that food is a prop that brings us together in fun and love.
