    Lino Savoia, co-owner of Cafe Del Fini, tells us that entertaining is a way of life in Italy. Since company is always expected, there's always something ready in the refrigerator to serve to guests. He says that even if you don't have a large gourmet kitchen, you can still serve appetizers that look as if they were prepared by a professional chef. These Italian hors d'oeuvres are easy to make and perfect for small-space entertaining because you can eat them while standing or with a lap tray.

    Eggplant Rolls

    1. Fry 1/4" slices of eggplant in light oil until golden on each side.

    2. In a food processor combine ricotta cheese, salt, white pepper, fresh shallots and a couple tablespoons of extra-virgin olive oil.

    3. Place a spoonful of the mixture on each slice of eggplant and roll the ends together.

    4. Top with a splash of balsamic vinegar and a pinch of chopped fresh basil.

    Bruschetta

    1. Toss a handful of chopped basil and tomato in 1/2 cup olive oil and add a dash of salt and pepper.

    2. Rub pieces of toasted Italian bread with the cut side of a garlic clove.

    3. Lightly brush each piece with olive oil.

    4. Top the pieces with the tomato mixture.

    Savoia says that by thinking big in a small kitchen, you will add a gourmet touch that you guests will appreciate and remember.
