    • For a Parmesan Crisp that is easy to prepare, mix some pine nuts with grated Parmesan cheese. Take 2 little handfuls at a time of this mixture and place them on a baking sheet and bake until crisp. These can be eaten plain or with a topping. For a quick topping, saute a little garlic with some extra virgin olive oil. Slice off the tops of asparagus and add to the garlic and olive oil. Place on top of the crisps and add some chopped basil. (figure A).



    • Fresh mozzarella is a wonderful Italian cheese. Just slice some tomatoes and cheese, and layer these with a fresh basil leave and a slice of prosciutto. Drizzle with some fresh extra-virgin olive oil (figure B).



    • The Italian version of the Monte Crisco is to take fresh mozzarella and place between two slices of bread (with crust removed) and add two slices of tomato and a basil leave. You can add prosciutto if you would like. Be sure and leave a little edge to the bread. Crimp the edges of the bread together and dip the edges of the bread in some milk. Dredge it through some flour and place in a pan, and add salt and pepper to taste. Pour beaten egg over this and then fry them in olive oil that is smoking. Fry about 3 minutes on each side until golden brown. Let them sit for a couple of minutes before you slice them so the cheese will not run out. These are good with a green salad that has been tossed with balsamic vinaigrette (figure C).



    • Coat some strawberries with sugar to taste, toss and then let sit in the refrigerator for 30 minutes to 1 hour. Take a 12-ounce jar of balsamic vinegar and place in a saucepan. Add 1 teaspoon of sugar and stir until it is reduced by half. When it coats the back of your spoon (approximately 5 minutes) it is ready. Drizzle this over the strawberries and add some lemon zest on top (figure D). This is also very refreshing at the end of a meal.
