Ingredients: 6 sturdy fruits (such as apples, pears or firm bananas) 1 cup all-purpose flour 1 tsp. salt 8 oz. light-colored beer 1 egg 2 egg whites 2 Tbs. sugar Preparation: Peel and slice fruit (bananas on diagonal, apples and pears in rings with core and seeds removed). In medium-size bowl, whisk together flour and salt. Add egg and beer and mix until smooth. Beat egg whites until frothy. Add sugar and whisk gently until blended. Combine egg-white mixture with the other ingredients. Allow batter to sit for about half an hour. Once batter has rested, dip fruit into batter, a piece at a time, and gently shake to remove excess. Fry in hot vegetable oil at 350 degrees a few minutes on each side, or until golden brown. Remove from oil and drain on paper towels. Top with a light coating of powdered sugar.
