 Cucumber Salad With Feta Cheese

Ingredients: 2 large cucumbers 8 oz. feta cheese, crumbled 1/2 red onion, chopped 2 Tbs. olive oil 1 Tbs. lemon juice 1 tsp. cumin 1/2 tsp. (or dash) paprika Preparation: Peel cucumber, remove seeds and cut into cubes. Combine with onion and cheese. Whisk oil and lemon juice together and drizzle over vegetables. Add cumin and sprinkle with paprika before serving.
