 Chicken Posole, Navajo Fry Bread and Watercress Salad

Ingredients:
3 Tbs. cider vinegar 2 Tbs. maple syrup 1/4 cup safflower oil Salt and pepper to taste 3 rinsed bunches watercress, tough stems discarded 2 thinly sliced green onions
Preparation:
In a large bowl, mix vinegar and syrup. Gradually whisk in safflower oil. Season with salt and pepper to taste. Add watercress and onions, and toss to coat.
