    Mom's Buttermilk Cornbread

    Ingredients:

    2/3 cup flour
    2/3 cup yellow cornmeal
    2/3 cup white cornmeal
    1 tsp. baking powder
    1 tsp. baking soda
    2 tsp. sugar
    2 eggs, slightly beaten
    2 cups buttermilk
    3 Tbs. melted butter
    2 tsp. vegetable oil for iron skillet

    Preparation:

    Mix dry ingredients. Add eggs, buttermilk and butter. Mix well. Heat oil in cast-iron skillet. Pour batter into hot skillet and bake at 400 degrees for 25 to 30 minutes or until golden brown.

    Yield: 8 servings
