    Ingredients:

    3 Tbs. butter
    5 medium onions, thinly sliced
    2 whole eggs
    2 egg yolks
    3/4 cup milk
    1/2 cup whipping cream or heavy cream
    1 tsp. salt
    black pepper to taste
    1/2 cup red bell pepper, diced
    2 Tbs. fresh Italian parsley, chopped
    1 partially baked 9-inch pie crust
    1 cup grated Swiss cheese

    Preparation:

    Preheat oven to 350 degrees and melt butter in a large skillet over medium-high heat. While butter is melting, slice onions and add them to pan and sautX until limp, but not brown. Beat together eggs, milk, whipping cream, salt and pepper in a medium bowl. Drain onions, add bell pepper and parsley. Arrange in pie shell. Cover with Swiss cheese. Pour beaten egg mixture over cheese. Place in preheated 350-degree oven and bake until pie puffs in the middle and is golden brown, about 40 minutes.

    Note: Recipe calls for yellow onions, but a combination of onions, especially some sweet ones like Maui, Walla Walla or Vidalias, would be great. Leeks and a few green onions would be a nice addition as well.

    Yield: 4 servings
