    Storing Raspberries

It's best to eat raspberries soon after picking them, certainly within a day or two.

If you have more raspberries than you can eat right away, you can freeze them. Place the berries in a single layer on a cookie sheet (figure A) and freeze them; then pour the frozen berries into a larger container for storage (figure B). With this method, the raspberries won't stick to one another, and you can easily remove just a few from the freezer at a time. Frozen raspberries lose some of their texture but none of their flavor.

    Enjoying Raspberries and Raspberry Recipes

Fresh whole raspberries are delicious sprinkled over cereal or mixed into a fresh fruit salad. For a cool summer drink, nothing beats a fresh smoothie; made from raspberries, yogurt and bananas, it's refreshing and easy to make.

Below are three great recipes. You can find more raspberry recipes on www.FoodNetwork.com.

    Frozen Fruit Smoothie

1 frozen banana, peeled and sliced
2 c. frozen strawberries, raspberries, or cherries
    1 c. milk
1/2 c. plain or vanilla yogurt
1/2 c. freshly squeezed orange juice
2 to 3 Tbsp. honey or to taste

Place all ingredients in a blender and process until smooth. Pour into glasses and serve.

Cook's note: For nondairy smoothies, substitute 1 c. rice milk for the milk and yogurt, or use soy yogurt or soymilk instead of dairy.

    Creampuffs

Recipe courtesy of Food Network Kitchens.
Recipe © 2003 Television Food Network, G.P. All rights reserved.

    Puffs:
    1 c. water
    6 Tbsp. unsalted butter
    1 tsp. sugar
    1/4 tsp. fine salt
    1 c. all-purpose flour
    4 large eggs
    1 egg yolk

    Filling :
1 c. diced strawberries or whole raspberries
    Chocolate Whipped Cream (recipe follows)

    1. In a medium saucepan, combine the water, butter, sugar and salt. Bring to a boil over medium heat. Remove the pan from the heat and sift the flour directly into the pan. Stir the mixture into a paste with a wooden spoon. Return the pan to a medium heat. Stir the mixture until it pulls away from the sides of the pan and is slightly shiny, about 3 minutes.

    2. Transfer the paste to a medium bowl and beat with a wooden spoon until slightly cooled, about 2 to 3 minutes. Add the eggs, one at a time, incorporating each one thoroughly before adding the next. Before adding the last egg, beat it in a small bowl. Add it by tablespoons to the mixture, just until the batter is smooth and tight. If the batter starts to get loose, do not add all of the last egg.

    3. Place a rack in the middle of the oven and preheat to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.

    4. Fill a large pastry bag, fitted with an open tip, with the creampuff mixture. Pipe 12 2-1/2" circular mounds, about 2" apart, onto the prepared pan. (Alternately, use a large spoon to form the dough into the mounds.) Dab the top of each puff with a fingertip dipped in water to smooth them. Beat the egg yolk with a tablespoon of water and brush the surface of the puffs with the beaten yolk.

    5. Bake in the middle of the oven for 15 minutes. Reduce the oven temperature to 350 degrees; continue baking until golden brown and the puffs are light, airy and crisp, about 30 to 35 minutes more. Cool on a rack.

    6. Assemble the creampuffs. Cut the puffs in half with a serrated knife and set the tops aside. (If the puffs are very moist inside, scoop out the excess dough and recrisp them in a 350-degree oven for about 5 minutes. Cool completely before continuing.) Put a heaping tablespoon of the fruit in the bottom half of the cream puffs. Pipe or spoon about 1/3 cup of the whipped cream on top. Replace the puff tops. Refrigerate for up to 3 hours, or serve immediately.

    Chocolate Whipped Cream

    2 c. cold heavy cream
    2 Tbsp. confectioner's sugar
    4 oz. semisweet chocolate, chopped

    1. Beat the cream in a medium bowl with an electric mixer or a whisk, until it begins to hold a loose peak. Sift the sugar into the cream. Continue beating until the cream holds a firm but still soft peak. Set aside.

    2. Put the chocolate in a clean medium-size microwaveable bowl. Melt the chocolate in the microwave, at half power, at 30-second intervals, until softened and warm. Whisk until smooth and liquid. (Alternatively, melt the chocolate in a double boiler.)

    3. Fold about 1/2 cup of the whipped cream into the warm chocolate to lighten it. Add the lightened chocolate mixture back to the remaining whipped cream, folding until completely blended. Store in an airtight container until ready to use. It's best used the same day it's prepared.

    Yield: about 4 cups

    Marinated Berries

Recipe courtesy of Food Network Kitchens.
Recipe © 2003 Television Food Network, G.P. All rights reserved.

    2 Tbsp. sugar
1 vanilla bean, split lengthwise, seeds scraped out with a knife and reserved
    Grated zest of 1/2 lemon
    Grated zest of 1/2 orange
    1 c. water
2 Tbsp. freshly squeezed orange juice
1 Tbsp. freshly squeezed lemon juice
    1/2 pt. raspberries
    1/2 pt. blueberries, rinsed
1/2 pt. strawberries, rinsed, tops trimmed, halved (or quartered, if large)

In a small saucepan, combine the sugar, vanilla bean and seeds, citrus zests and water. Bring to a boil and then reduce the heat to low. Simmer very gently to make a loose syrup, about 25 minutes. Remove from the heat and add the citrus juices. Combine the berries in a bowl. Strain the warm syrup over the berries and marinate at room temperature for 30 minutes before serving.
