    Your vegetable garden can be more than a hobby -- you can actually earn money from it. Demand for organically grown gourmet vegetables and greens is high among restaurants and upscale markets. Elizabeth Berry, who gardens in the canyons of northern New Mexico (figure A), sells most of her produce to the restaurant trade. On her farm the work of growing two acres of greens and five acres of other produce is done by only five people.

    Her number-one selling crop is arugula (figure B), followed by squash blossoms.
