    Chicken Mole

    Full of traditional Mexican flavor, this mole sauce will definitely have your senses sizzling.

    Chicken Mole
    Ingredients:

    2 tbsp. vegetable oil
    1/4 c. raisins
    1/2 c. canned tomatoes, diced
    1 medium onion, coarsely chopped
    2 cloves garlic, coarsely chopped
    1 corn tortilla, torn in small pieces
    1-1/2 c. chicken stock
    1 oz. unsweetened baking chocolate, grated
    2 split chicken breasts
    2 chicken thighs
    2 chicken drumsticks
    chopped cilantro for garnish

    Seed and Nut Mixture:

    1/2 Tbsp. sunflower seeds
    2 Tbsp. sesame seeds
    1/4 tsp. cumin seeds
    1/4 tsp. anise seeds
    1/2 c. blanched, slivered almonds

    Spice Mixture:

    1/4 tsp. ground oregano
    1/4 tsp. cinnamon
    pinch ground cloves
    1/2 tsp. salt
    1/4 c. chili powder

    1. Heat 1 Tbsp. oil in a large skillet and brown chicken on both sides (figure A). The chicken will not be thoroughly cooked, so refrigerate it while you're making the mole sauce.

    2. Heat 1 Tbsp. oil in a small skillet, add seed/nut mixture and heat until toasted (figure B). Puree in a food processor.

    3. Add spice mixture, raisins, chili powder, tomatoes, onion, garlic, tortilla and 1/2 c. chicken broth to the food processor (figure C). Process mixture until smooth (figure D).

    4. Transfer the paste to a saucepan and stir in the remaining chicken broth. Add grated chocolate and stir until melted (figure E).

    5. Add the browned chicken pieces to the sauce, placing the dark meat pieces on the bottom (figure F). Cook until the chicken is thoroughly cooked, approximately 30-45 minutes.

    6. Serve with rice and garnish with chopped cilantro (figure G).

    Mango Margaritas

    No fiesta would be complete without 'ritas — and this recipe is guaranteed to get the party started.

    Mango Margaritas
    Ingredients:

    1-1/4 oz. silver tequila
    1 oz. triple sec
    1-1/2 oz. freshly squeezed lemon juice
    2 oz. simple syrup
    3/4 c. partially frozen mango, unsweetened

    1. Place all ingredients in a blender and blend until smooth (figure A) (figure B). Pour the mixture into a glass (figure C). This recipe makes one drink, so multiply the amounts to make multiple drinks.
