    Materials:

    1 bunch of leeks, washed
    1 short blade Thai-style knife
    toothpicks (generic)

    1. Begin with large leek, trim root end neatly.

    2. Remove the bottom white portions.

    3. Starting with the cut end, make a lengthwise cut 2/3 the length of the leek.

    4. Repeat incision across previous cut.

    5. Fold layer down towards the center, like you are tucking it in.

    6. Repeat with other layers.

    7. Fold in layers on all four sides then carefully trim the center so it is even with the curled petals.
