Make a leaf template and then cut out green crepe paper leaves and place them with double-stick tape all around the cake plate with approximately half of the leaf over the edge of the plate (figure A). Overlap the leaves a little.
Place a doily in the center. Secure the doily to the leaves with double-stick tape.
Fold three pieces of waxed paper in half and place them around the cake to protect the paper leaves and doily from frosting, etc. You will pull the waxed paper out after you have put the frosting on the cake.
Instead of using an serrated knife, slice each cake round in half to form 4 layers by pulling a piece of dental floss through each layer (figure B).
Place the first layer of the cake on the doily.
Spread a layer of tapioca, add the next cake layer in the alternate flavor, spread a layer of whipped cream, and continue in this manner.
Tip: Put on as much filling as you like. Jam could also be used as a filling instead of the tapioca or whipped cream -- it is your choice.
Frost the entire cake with whipped cream. Remove the waxed paper before you begin embellishing the cake.
Note: Always use pesticide-free edible embellishments.
Place a roll of raspberries around the top and bottom edge of the cake and then decorate with mint and flowers. Once cut, the cake looks festive with the two cake colors alternated (figure C).
