    Peanut Butter and Chocolate Chip Ice Cream Cake

    Blow out the candles and dig in! Kids of all ages will love this ice cream cake with a savory peanut butter cookie crust. Parents will love knowing they can make this delectable dessert weeks in advance.

    Peanut Butter and Chocolate Chip Ice Cream Cake
    Ingredients:

    vegetable oil
    9" springform pan
    1 9-oz. package peanut butter cookies (approximately 3 c.)
    1/4 c. butter (1/2 stick), melted
    1/2 gal. vanilla ice cream
    1 bag milk chocolate chunks or chips
    canned whipped cream and sprinkles for garnishing

    1. Oil the bottom and sides of a springform pan with vegetable oil (figure A).

    2. In a food processor, crush the cookies until very fine (figure B). Add melted butter to the cookie crumbs and mix to a crust consistency. Press mixture in the bottom of a pan and freeze 10-15 minutes to set.

    3. Microwave vanilla ice cream on low for 15-30 seconds. Spoon the ice cream into a mixing bowl. Add chocolate chunks and stir until well blended (figure C). Remove pan from freezer and smooth ice cream over cookie crust (figure D). Freeze for 20 minutes to set.

    4. Cover with plastic wrap; freeze for 3 hours or until firm. This can be made weeks in advance.

    5. Ten minutes before serving, remove from the freezer and place warm, wet towels around the pan. Carefully remove the side of the pan. Decorate with chocolate and sprinkles (figure E).

    Pirate-themed lunch:

    Materials:

    brown paper sack
    markers
    fish-shaped snacks
    scrap of fabric
    ribbon
    chocolate gold coin candies
    cookie cutters

    To make a pirate lunch bag, crumple the bag and draw a "treasure map" on the outside (figure A). Add fish-shaped snacks, a "treasure sack" of gold coins and sandwiches cut into shapes (figure B).

    Fairy-themed lunch:

    Materials:

    brown paper sack
    craft paint
    artificial flower
    ribbon
    jellybeans
    pretzel sticks
    toys or stickers
    cookie cutters

    To make the fairy lunch, paint the front of the bag with lavender craft paint. Fold the top of the bag over and punch two holes (figure C). Include pretzel "fairy sticks," "magic jelly beans," cookie-cutter sandwiches and a birthday note (figure D). Once the lunch is packed, fold the top of the bag over, thread a ribbon through the punched holes and tie on an artificial flower.

    Golden Birthday Ticket:

    Materials:

    chocolate bar
    gold foil
    I.O.U. or coupon for a treat
    scrapbooking paper

    To make a Golden Birthday Ticket bar, unwrap a chocolate bar, fold an I.O.U. or coupon for a treat and wrap in the gold foil with the chocolate (figure E). Make a printed wrapper from scrapbooking paper.
