    Dill Sweet Pickles

    Here’s the scoop on a classic recipe for sweet pickles that pop with color and flavor.

    Pickles -- Dill & Sweet
    Ingredients:

    12 c. cucumbers, sliced by hand or on a mandoline
    4 onions, sliced
    2 sweet red bell peppers, sliced, seeds and stem removed
    1/2 c. salt
    2 c. vinegar
    1-1/2 c. sugar
    1 tsp. turmeric
    2 tsp. mustard seed

    1. Combine vegetables and salt; let stand 30 minutes, then drain (figure A).

    2. Heat vinegar, sugar and spices. Add vegetables and bring to a boil; boil for 5-10 minutes or until transparent (figure B).

    3. Pack hot pickles and liquid into heated jars, leaving 1/4" headspace (figure C). Keep jars and lids hot in a hot-water bath while preparing the ingredients (figure D).

    4. Remove air bubbles with a nonmetallic spatula; wipe jar rims clean with a clean cloth. Screw lids on evenly and firmly, just to the point of resistance (figure E).

    4. Process the jars for 10 minutes in a boiling water canner. This recipe makes approximately 4 quarts.
