 The three-tier fondant cake is ready to be embellished.

Creating Flowers With Cutters and Gum Paste1. Put on latex gloves and color a small bit of gum paste with gel food colors. 2. With powdered sugar to help it keep from sticking, roll the gum paste through the pasta machine starting at the thickest settings and work to the second to the thinnest setting on the pasta machine. A rolling pin is optional but it is impossible to get the petals as thin. Note: A counter with at least a 1-2" lip is needed to attach the hand-crank pasta maker to the counter securely.

 Delicate monarch-butterfly toppers distinguish this simple white fondant cake.

3. Roll contrasting color through pasta machine.4. Using assorted flower cookie cutters cut the rolled gum paste into flower shapes. 5. Using round cutters or tips, cut the contrasting color gum paste into flower centers. 6. Using royal icing in a sandwich bag, attach the flower centers to the flowers and the flowers to the cake. See Materials list on the first page of this project. - Determine the size of butterfly you'd like to make getting a picture is helpful, and sketch its wings on cardstock paper; cut out the shapes with scissors (figure D).
- With powdered sugar to help it keep from sticking, roll the gum paste through the pasta machine starting at the thickest setting and working down to the second of the thinnest settings.
- Using the paper as a template, trace the shape on the gum paste with a craft knife.
Note: Gum pastes forms can take several days to fully dry, and should be created well in advance of your cake. - Using a small paintbrush, paint the orange/yellow areas of the monarch wing. Let dry thoroughly.
- Using a smaller paintbrush, paint the black outlines on the monarch wing. Let dry thoroughly.
- Using the smaller paintbrush, paint the white spots on the monarch wing. Let dry thoroughly.
- Repeat on backside of wings with a lighter shade of orange.
- Create a monarch body using gum paste, matching the size of the body to the size of the wings you created.
- Using two small bits of small gage wire, create antennae by curling the ends and sticking them into the gum paste body.
- Paint the body black, and let it dry thoroughly.
- Attach the antennas with black icing to the holes pre-made in the body.
- Attach the wings to the body using black royal icing (figure E).
