    No dinner is complete without your vegetables. Guest Clare Crespo joins host Jennifer Perkins and demonstrates how to make a huge mash potato monster head. Vegetables are used to create the facial features of the monster.

    Monster Head Potatoes

    Materials:

    1 head of broccoli, cut into florets
    1 mushroom
    2 asparagus spears
    1/2 red pepper, cut into lip-shaped slices
    1 Tbs. vegetable oil
    2 radishes
    2 black olive slices
    2 peas
    6 baking potatoes, peeled
    2 tsp. salt
    1/3 cup milk (or heavy cream)
    3 Tbs. butter
    1 tsp. pepper
    1/4 cup canned corn
    large mixing bowl
    paring knife
    potato masher (if mashing potatoes)
    serving platter

    1. Steam the broccoli until cooked (5-10 minutes). Saute the mushroom, asparagus, and red pepper slices in oil if you don't like them raw.

    2. To make the eyeballs, peel the radishes, leaving thin strips of skin in place for the eye veins. Slice off one end of the radishes to make a flat surface. Place a black olive slice with a pea in the center on the flat end of the radish.

    3. Bring a large pot of water to boil.

    4. Peel potato skins. Quarter the potatoes and boil them covered 15 minutes or until soft.

    5. Remove from heat. Drain the potatoes and place them in a large mixing bowl. Add the milk, butter, pepper and salt and mash with a potato masher. Stir until fluffy. Allow the potatoes to cool slightly. With very clean hands, sculpt a head on a big serving platter.

    6. Place broccoli on the head for hair.

    7. Make a mouth with the red peppers and add corn for teeth.

    8. Attach the mushrooms to make the nose.

    9. Affix eyeballs and place asparagus above them for eyebrows.

    10. Attach one of the wedges for the head.
