Cherry Cheesecake PieThe pies the limit for this winning recipe: a one-of-a-kind cross between cherry pie and traditional cheesecake that will have you begging for seconds.
Filling ingredients:2 eggs 1/2 c. sugar 2 tsp. vanilla extract 1-1/2 c. sour cream 2 packages (8 oz. each) cream cheese, softened and cut in pieces 2 tbsp. melted butter 1 can (21 oz.) cherry pie filling Crust ingredients: 1 c. graham cracker crumbs (approximately 15 crackers) 1/2 c. sugar 1/4 c. melted butter 1. Combine crust ingredients. Press into a 9" pie pan (figure A). Bake at 400 degrees for 6 minutes. Cool before filling.
2. Prepare cheesecake pie filling by beating together eggs, sugar, vanilla and sour cream. Gradually add cream cheese, beating until thoroughly mixed (figure B). Beat in melted butter. Pour cheese mixture into the baked graham cracker crust (figure C).
3. Bake at 325 degrees for 35 minutes, or until set in center. Chill in the refrigerator; the pie will firm up as it cools. Top with cherry pie filling; chill thoroughly before serving (figure D).
