    Banana Cream Pie

    Fresh bananas, chocolate shavings and a thick, flaky crust make this dessert the cream of the crop.

    Banana Cream Pie
    Ingredients:

    1-1/3 c. finely crushed vanilla wafers
    1/3 c. melted butter
    3/4 c. white sugar
    1/3 c. all-purpose flour
    1/4 tsp. salt
    2 c. milk
    3 egg yolks, beaten
    2 tbsp. butter
    1-1/4 tsp. vanilla extract
    3 bananas, sliced

    1. For the piecrust, combine melted butter and crushed vanilla wafers (figure A). Firmly pat the mixture along the sides and bottom of a pie pan (figure B). Precook at 350 degrees for 5 minutes.

    2. In a saucepan, combine sugar, flour and salt. Gradually add milk while stirring gently. Cook over medium heat, stirring constantly until the mixture begins to bubble (figure C). Continue stirring and cook for approximately 2 more minutes, before removing from the burner.

    3. Temper the eggs by stirring a small quantity of the hot mixture into the beaten yolks (figure D). Immediately add egg yolk mixture to the hot mixture. Cook for 2 more minutes, stirring constantly. Remove the mixture from the stove, add butter and vanilla and stir to a smooth consistency (figure E).

    4. Slice bananas into the cooled baked piecrust and top with pudding mixture (figure F). Bake at 350 degrees for 12 to 15 minutes. Chill for an hour; top with whipped cream and shaved chocolate when it's time to serve the pie (figure G). To make whipped cream, whip two Tbsp. powdered sugar into a small container of whipping cream.
